Anthony Bourdain lifted the veil of restaurant life in his memoir "Kitchen Confidential," detailing the highs and lows of working in the back-of-house. Kitchen life can be exhausting, working long hours on your feet, trying not to burn yourself on the grill or with boiling oil, and covering shifts for coworkers who quit without giving word. And of course, there is the rigid hierarchy, put into place by legendary French chef Georges-Augustus Escoffier at the end of the 19th century. Leaning on his time in the military, Escoffier created what is now known as the brigade system, with the Chef de Cuisine (head chef) as the general, and assigning rankings all the way down the line to the garçon de cuisine (kitchen boy). 

While some of the rigidity of Escoffier's system is starting to relax, the fundamental model remains in place today in many restaurant kitchens.
